Or perhaps they’re temple cats? Maybe the Eye of Horus and those little markings are simply part of their natural coat pattern, while the ankh collar marks them as temple companions.

I still question how the AI image gens that have the correct cutie mark for ponies actually get it right.
For instance, underneath Somnambula’s dress, you can see her cutie mark. And it is mostly accurate to how it appears in the show-I just checked Derpibooru to confirm that (the only errors being the two beads at the top of the cutie mark necklace are the wrong size, and one of the beads appears to be yellow instead of white). Generating the correct cutie mark on a pony is very difficult for an AI to do, and it’s even harder for a pony that is wearing translucent clothes on top (as seen with Somnambula here, which is likely why the errors I mentioned popped up).
This is a really nice image gen as always, SeaShell. I love the fact that you keep the slice of life setting and watercolour art style consistent for all of them.

Also, that Cat is probably a Changeling, or it has been magically modified (perhaps even at the genetic level) to present that symbol on its rump… A flex by a clan of powerful Earth Ponies and/or Unicorns (or rich/powerful enough to hire such?) to put the symbol of their House on their pets?
So your hypothesis is that Horus modified/created those Cats directly? That works too.
